Para la ocasi\u00f3n, me encargu\u00e9 de hacer unos <strong>Congolais<\/strong>, esos bollitos esponjosos de coco. <\/p>\n<p><!--more--><\/p>\n<p>Si has seguido los comentarios de mi art\u00edculo sobre el flan, habr\u00e1s visto que la receta que publiqu\u00e9 es en realidad una receta simplificada del <a href=\"https:\/\/camille-patisserie.com\/recette-patisserie\/entremets\/flan\/\" target=\"_blank\" rel=\"noopener\">flan de Christophe Felder<\/a>. Una peque\u00f1a an\u00e9cdota: es muy extra\u00f1o abrir tu correo electr\u00f3nico y darte cuenta de que un gran chef se ha tomado la molestia de comentar tu blog (si hubiera estado sentada, me habr\u00eda ca\u00eddo de mi asiento&#8230; \u00a1pero afortunadamente mi RER estaba lleno!) As\u00ed que, volviendo a nuestros congole\u00f1os, \u00e9sta era la ocasi\u00f3n perfecta para ponerme al d\u00eda y probar una \u00abaut\u00e9ntica\u00bb receta Felder.  <\/p>\n<p>Para estar segura de mi fuente y no correr m\u00e1s riesgos, abr\u00ed mi libro<a href=\"https:\/\/www.christophe-felder.com\/livres\/index.php?page=2#!prettyPhoto%5Biframe%5D\/8\/\" target=\"_blank\" rel=\"noopener\">\u00abP\u00e2tisserie, l&#8217;ultime r\u00e9f\u00e9rence<\/a> \u00ab. Lo hab\u00eda comprado cuando me preparaba para el CAP, pero como estaba practicando con las fichas del examen, no hab\u00eda tenido ocasi\u00f3n de probarlo. <\/p>\n<p>Estuve a punto de torcer la receta y omitir los 10 g de compota, pero decid\u00ed ser una buena chica y seguir la receta al pie de la letra (y es normal en realidad, no se puede dar una opini\u00f3n objetiva si no se prueba la receta original).<\/p>\n<p>Es una receta supersencilla: mezcla el coco, el az\u00facar, las claras de huevo y la compota. Despu\u00e9s cali\u00e9ntalo al ba\u00f1o mar\u00eda hasta que alcance los 50\u00b0C. A continuaci\u00f3n, da forma y hornea a 220\u00b0C. Lo m\u00e1s complicado es dar forma a los bollos de la manera m\u00e1s uniforme posible para que se cocinen por igual, pero al final no es tan dif\u00edcil.   <\/p>\n<p>\u00bfEl veredicto? \u00a1Perfectos! Tambi\u00e9n se encuentra en diversas formas en la cocina criolla y antillana.
