Una t\u00e9cnica que a menudo hace que los aficionados (y tambi\u00e9n los profesionales cuando salen de su querido horno) rompan a sudar fr\u00edo. Me llamo<strong>eclair de chocolate<\/strong>. Tambi\u00e9n echaremos un vistazo al <strong>glaseado de un \u00e9clair de chocolate<\/strong>, \u00a1porque no es moco de pavo!   <\/span><\/p>&#13;\n\r\n<p><!--more--><\/p>\r\n&#13;\n<p>Ya he detallado en un art\u00edculo c\u00f3mo <a href=\"https:\/\/camille-patisserie.com\/es\/recetas-basicas-de-reposteria-cap\/la-pasta-choux-5-pasos-hacia-el-exito\/\">hacer una pasta choux con \u00e9xito<\/a>, as\u00ed que \u00e9ste no ser\u00e1 el tema de hoy. La pasta choux no me parece muy dif\u00edcil de dominar, \u00a1pero conseguir un escalfado regular es otra cosa! chocolate se llama \u00e9clair?<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n&#13;\n<p>No lo sab\u00eda antes de escribir este art\u00edculo, \u00a1pero el \u00e9clair de chocolate debe su nombre a la rapidez con que se come! Fue inventado por Antonin Car\u00eame, que en el siglo XIX tuvo la idea de adaptar una receta de la \u00e9poca llamada \u00abpain \u00e0 la duchesse\u00bb eliminando las almendras y a\u00f1adiendo fondant y <a href=\"https:\/\/camille-patisserie.com\/recettes-de-base\/creme-patissiere-chocolat\/\" target=\"_blank\" rel=\"noopener\">crema pastelera de chocolate<\/a>. Un \u00faltimo apunte hist\u00f3rico: el \u00e9clair est\u00e1 arrinconando poco a poco a la religieuse en el armario de la reposter\u00eda (\u00a1para mi gran desesperaci\u00f3n!). Como el \u00e9clair es m\u00e1s sencillo de hacer, se prefiere por razones de rentabilidad.   <\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"taille-reglementaire-de-l-eclair-au-chocolat-cap-patisserie\"><span class=\"ez-toc-section\" id=\"Tamano-reglamentario-para-eclairs-de-chocolate-CAP-patisserie\"><\/span>Tama\u00f1o reglamentario para eclairs de chocolate CAP p\u00e2tisserie<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n&#13;\n<p>Para el diploma CAP de pasteler\u00eda, un \u00e9clair debe medir entre 12 y 16 cm. Puedes llevarte una plantilla para marcar las dimensiones en la hoja sulturizada que te proporcionar\u00e1 el centro. Pero te aconsejo que utilices este truco que te ense\u00f1an en el centro de formaci\u00f3n: coge tu cortapastas y m\u00f3jalo en agua. Sum\u00e9rgelo en la harina y coloca una l\u00ednea de harina en tu bandeja de horno. \u00a1Es el tama\u00f1o ideal para escalfar tus \u00e9clairs de chocolate! Repite la operaci\u00f3n tantas veces como sea necesario para hacer el n\u00famero de \u00e9clairs especificado en la <a href=\"https:\/\/camille-patisserie.com\/comment-bien-lire-une-fiche-technique-du-cap-patissier\/\">ficha t\u00e9cnica<\/a>.     <\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"quelle-douille-pour-un-eclair-au-chocolat\"><span class=\"ez-toc-section\" id=\"Que-manga-para-un-eclair-de-chocolate\"><\/span>Qu\u00e9 manga para un \u00e9clair de chocolate<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n&#13;\n<p><span style=\"font-weight: 400;\">Una vez que hayas hecho tu pasta choux seg\u00fan las reglas y hayas aprendido a <a href=\"https:\/\/camille-patisserie.com\/chouquettes-cap-patisserie\/\">sujetar bien la manga pastelera<\/a>, s\u00f3lo te queda llenar la manga con tu pasta choux. Tienes varias opciones para la punta: una PF (petits fours) 14 \u00f3 16 estriada o no. Si optas por una punta lisa, tendr\u00e1s que marcar tus \u00e9clairs con un tenedor. Personalmente, obtengo los mejores resultados con una PF 16.     <\/span><\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"pochage-de-l-eclair\"><span class=\"ez-toc-section\" id=\"Embolsamiento-del-rayo\"><\/span>Embolsamiento del rayo<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n&#13;\n<p>No es f\u00e1cil darte consejos para esta etapa, aparte de que la presi\u00f3n debe ser constante para obtener \u00e9clairs de forma uniforme. Pero no te preocupes, \u00a1con la pr\u00e1ctica pronto le coger\u00e1s el truco! Como peque\u00f1a an\u00e9cdota, debes saber que la mayor\u00eda de los grandes chefs (incluido C\u00e9dric Grolet) escalfan sus \u00e9clairs a lo largo de toda la bandeja de horno, los congelan y luego los cortan al tama\u00f1o adecuado con un cuchillo.  <\/p>&#13;\n&#13;\n<p>Para volver a nuestros rel\u00e1mpagos, recuerda llevar la parte posterior del rel\u00e1mpago hacia atr\u00e1s para que no sobresalga (si\u00e9ntete libre de corregir con un tenedor mojado en agua).  <span style=\"font-weight: 400;\">S\u00f3lo queda pincelarlos con huevo batido y hornearlos durante 35 minutos a 180\u00b0C. Si todo va bien, tus \u00e9clairs empezar\u00e1n a hincharse. Si no est\u00e1 bien cocida, tus magn\u00edficos \u00e9clairs se deshar\u00e1n (\u00a1me ha pasado varias veces y es REALMENTE frustrante!). En primer lugar, recuerda que es mejor cocer un poco de m\u00e1s los \u00e9clairs, ya que recuperar\u00e1n su blandura al entrar en contacto con la crema pastelera.  <\/p>&#13;\n&#13;\n<p>Hay varias cosas que puedes hacer para ayudar:<\/p>&#13;\n&#13;\n<ul class=\"wp-block-list\">&#13;\n<li>deben estar dorados<\/li>&#13;\n<li>no deber\u00eda haber m\u00e1s gotas<\/li>&#13;\n<li>el interior de las ranuras ya no debe estar brillante<\/li>&#13;\n<\/ul>&#13;\n&#13;\n<p>Si sigues estas pautas, \u00a1todo deber\u00eda ir bien! Pero te invito a que pruebes y practiques para averiguar qu\u00e9 receta te funciona mejor. <\/p>&#13;\n&#13;\n<figure class=\"wp-block-image\"><img decoding=\"async\" class=\"wp-image-2562\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/2018\/03\/&#xE9;clairs-au-chocolat-web.jpg\" alt=\"eclair de chocolate\" title=\"\"><\/figure>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"quelle-creme-pour-l-eclair-au-chocolat\"><span class=\"ez-toc-section\" id=\"%C2%BFQue-crema-para-el-eclair-de-chocolate\"><\/span>\u00bfQu\u00e9 crema para el eclair de chocolate?<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n&#13;\n<p>Los \u00e9clairs de chocolate se rellenan con <a href=\"https:\/\/camille-patisserie.com\/recettes-de-base\/creme-patissiere-chocolat\/\" target=\"_blank\" rel=\"noopener\">crema pastelera de chocolate<\/a>. Hay varias formas de hacerlo: cortar los \u00e9clairs por la mitad o hacer 3 agujeros con una manga pastelera peque\u00f1a y luego rellenarlos. Como puedes ver, yo he optado por hacer agujeros. A medida que el \u00e9clair se llena de crema pastelera, su peso aumenta. Cuando notes que el peso ha cambiado de verdad, suele ser porque se ha llenado uniformemente. Puedes comprobar que la crema sale por el \u00faltimo agujero, \u00a1se\u00f1al de que el \u00e9clair est\u00e1 bien relleno!   <\/p>&#13;\n&#13;\n<p>Ahora ya sabes todo lo que hay que saber sobre la pasta choux, \u00a1y deber\u00eda irte como la seda para hacer estos deliciosos \u00e9clairs de chocolate!<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"comment-faire-le-glacage-des-eclairs-au-chocolat\"><span class=\"ez-toc-section\" id=\"%C2%BFComo-se-hace-el-glaseado-para-los-eclairs-de-chocolate\"><\/span>\u00bfC\u00f3mo se hace el glaseado para los \u00e9clairs de chocolate?<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n&#13;\n<p>La \u00faltima capa de muchos pasteles (y no s\u00f3lo de los eclairs) se hace con un preparado conocido como fondant patissier o fondant blanc. De hecho, este glaseado se encuentra sobre todo en los milhojas y en la reposter\u00eda religiosa. Se elabora con jarabe de glucosa y (mucho) az\u00facar. Se puede aromatizar para adaptarlo a la masa que quieras cubrir. Aqu\u00ed a\u00f1adiremos una peque\u00f1a cantidad de pasta de cacao para darle ese sabor a chocolate que tanto nos gusta. Ahora puedes encontrar fondant en las tiendas que venden material de reposter\u00eda, o puedes hacer tu propio <a href=\"https:\/\/mamouandco.wordpress.com\/2016\/01\/20\/fondant-blanc-patissier\/\" target=\"_blank\" rel=\"noreferrer noopener\">fondant<\/a> (pero no te lo recomiendo, porque lleva un poco de tiempo y prepararlo ya es bastante t\u00e9cnico de por s\u00ed).       <\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"preparer-le-glacage-de-l-eclair-au-chocolat-la-technique\"><span class=\"ez-toc-section\" id=\"Preparacion-del-glaseado-del-eclair-de-chocolate-la-tecnica\"><\/span>Preparaci\u00f3n del glaseado del \u00e9clair de chocolate: la t\u00e9cnica<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n<p>La temperatura del fondant es crucial para la colocaci\u00f3n: debe estar lo suficientemente caliente y un poco l\u00edquido para poder colocarlo, pero no demasiado caliente para que no se vuelva opaco. Por tanto, tu fondant nunca debe superar los 37\u00b0C. Esto se conoce como fraguar el fondant.  <\/p>\n&#13;\n<h2 class=\"wp-block-heading\" id=\"comment-faire-concretement\"><span class=\"ez-toc-section\" id=\"%C2%BFComo-lo-hacemos\"><\/span>\u00bfC\u00f3mo lo hacemos?<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n<p>Como te dec\u00eda, lo \u00fanico que tienes que hacer es poner una buena cantidad de fondant en el molde y a\u00f1adir unos quince gramos de cacao. Ponlo todo en un cazo al ba\u00f1o Mar\u00eda a fuego lento y remueve hasta que la t\u00e9cnica sea fluida y homog\u00e9nea. Para diluir un fondant demasiado duro, puedes a\u00f1adir un poco de agua o jarabe de 30\u00b0 o 60\u00b0 Brix (ten cuidado con la cantidad, \u00fasala con moderaci\u00f3n). El fondant debe estar siempre a 32-33\u00b0C, por lo que tendr\u00e1s que ir moviendo la sart\u00e9n de un lado a otro sobre el fuego mientras glaseas tus \u00e9clairs. \u00a1As\u00ed que vigila de cerca la temperatura!    <\/p>\n&#13;\n<h2 class=\"wp-block-heading\" id=\"l-astuce-pour-reussir-son-fondant-au-chocolat\"><span class=\"ez-toc-section\" id=\"Consejos-para-hacer-un-fondant-de-chocolate-con-exito\"><\/span>Consejos para hacer un fondant de chocolate con \u00e9xito<span class=\"ez-toc-section-end\"><\/span><\/h2>&#13;\n<p>Un peque\u00f1o consejo de un profesor de pasteler\u00eda: haz grandes cantidades. As\u00ed que no tengas miedo de consumir toda la cantidad, sobre todo porque se conserva muy bien.  <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Colocacion-del-fondant-de-chocolate\"><\/span>Colocaci\u00f3n del fondant de chocolate  <span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Existen dos t\u00e9cnicas para aplicar el fondant patissier a los \u00e9clairs: la t\u00e9cnica de inmersi\u00f3n y la t\u00e9cnica de esp\u00e1tula. Te remito a este v\u00eddeo de la Academia de Versalles que explica muy bien c\u00f3mo <a href=\"https:\/\/www.youtube.com\/watch?v=9-WP1A48rJM&amp;ab_channel=ApprendreAutrementlaPatisserieBoulangerie\" target=\"_blank\" rel=\"noreferrer noopener\">glasear \u00e9clairs de forma sencilla<\/a>. <\/p>\n<p>Otro m\u00e9todo, el de la paleta, consiste en utilizar una esp\u00e1tula para verter el fondant sobre la cinta y luego pasar r\u00e1pidamente el rayo por debajo (de abajo arriba).<\/p>\n<p>El segundo m\u00e9todo es m\u00e1s limpio, pero no cubre todo el rayo (hace una tira m\u00e1s fina). Personalmente, no me gusta tanto, as\u00ed que lo sumerjo. Lo importante es encontrar una t\u00e9cnica que se adapte a ti y que puedas dominar.  <\/p>\n<h2><span class=\"ez-toc-section\" id=\"%C2%BFMi-fondant-es-un-exito\"><\/span>\u00bfMi fondant es un \u00e9xito?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>En el examen, se te evaluar\u00e1n 2 criterios: el brillo del fondant de chocolate y la limpieza de los bordes del glaseado.<\/p>\n<p>Autocr\u00edtica: mi fondant est\u00e1 medianamente bien desarrollado, normalmente deber\u00eda estar un pel\u00edn m\u00e1s brillante.<\/p>\n<p>&nbsp;<\/p>\n<figure
