Este a\u00f1o, he querido publicar la versi\u00f3n cl\u00e1sica de <strong>la pasteler\u00eda CAP<\/strong>. Ver\u00e1s que no es un postre muy complicado (de hecho, creo que es uno de los m\u00e1s sencillos). rebanada de bizcocho empapada en sirope Brix, sobre la que colocas un poco de crema mousseline y trozos de fresas (\u00a1muchas!) y que \u00abcierras\u00bb con otra rebanada de bizcocho. Dec\u00f3ralo con glaseado o mazap\u00e1n. <\/p>\n<p>Para m\u00ed, el objetivo de una planta de fresa es que tenga un tama\u00f1o est\u00e1ndar de 4,5 cm. \u00a1Y nunca te dar\u00edas cuenta de que es tan peque\u00f1a! Conseguir medir todos los ingredientes y no pasarse no siempre es f\u00e1cil, as\u00ed que recuerda \u00abapuntar peque\u00f1o\u00bb.  <\/p>\n<h2><span class=\"ez-toc-section\" id=\"El-bizcocho\"><\/span>El bizcocho<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Para el bizcocho, encontrar\u00e1s todos los consejos en mi art\u00edculo sobre <a href=\"https:\/\/camille-patisserie.com\/recettes-de-base\/biscuits\/genoise\/\" target=\"_blank\" rel=\"noopener\">el bizcocho<\/a> o puedes descargarte mi ebook gratuito <a href=\"https:\/\/camille-patisserie.com\/cap-patisserie-candidat-libre\/11-techniques-de-cap-reussir-toutes-patisseries\/\" target=\"_blank\" rel=\"noopener\">\u00ab11 t\u00e9cnicas CAP para que TODA tu reposter\u00eda sea un \u00e9xito\u00bb<\/a>. Lo \u00fanico que tienes que hacer es batir los huevos enteros y el az\u00facar en un robot de cocina durante unos 15 minutos. La mezcla doblar\u00e1 su volumen. A continuaci\u00f3n, a\u00f1ade suavemente la harina y mezcla con cuidado con una esp\u00e1tula.   <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Crema-muselina\"><\/span>Crema muselina<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>La muselina es una mezcla de <a href=\"https:\/\/camille-patisserie.com\/recettes-de-base\/creme-patissiere-chocolat\/\" target=\"_blank\" rel=\"noopener\">crema pastelera<\/a> y mantequilla, y hace poco te expliqu\u00e9 c\u00f3mo hacerla en la receta <a href=\"https:\/\/camille-patisserie.com\/2018\/06\/25\/paris-brest-individuel-facon-cap\/\" target=\"_blank\" rel=\"noopener\">Par\u00eds-Brest<\/a>. Todo lo que tienes que hacer es preparar tu propia crema pastelera, dejarla enfriar y a\u00f1adir un poco de mantequilla (los 2 ingredientes deben estar aproximadamente a la misma temperatura para evitar que la crema se corte). Luego bate a velocidad alta durante unos 10 minutos para incorporar el aire y expandir la crema. El jarabe brix 30 o 60 (pronunciado jarabe brix 30 grados o 60 grados). Es un sirope que se puede utilizar para muchas cosas (relajar el fondant, pinchar un bizcocho, glasear tartas de manzana&#8230;).  <\/p>\n<p>El grado Brix mide el peso en gramos de materia seca contenida en 100 g de producto. Se mide con un refract\u00f3metro. Cuanto m\u00e1s alto es el grado Brix, m\u00e1s dulce es el sirope. El grado Baum\u00e9 (B), antes muy utilizado, se ha abandonado en favor del grado Brix (que no tiene abreviatura).   <\/p>\n<p>Hoy en d\u00eda se utiliza mucho el jarabe de 60\u00b0 o 30\u00b0 Brix.<\/p>\n<ul>\n<li><strong>Jarabe de 60\u00b0Brix<\/strong>: 150 g de az\u00facar y 115 g de agua llevados a ebullici\u00f3n y utilizados a 20\u00b0C.<\/li>\n<\/ul>\n<ul>\n<li><strong>Jarabe de 30\u00b0Brix<\/strong>: 30 g de az\u00facar y 70 g de agua llevados a ebullici\u00f3n y utilizados a 20\u00b0C.<\/li>\n<\/ul>\n<p>Sin embargo, para facilitar su uso, la aproximaci\u00f3n 50 g de az\u00facar\/50 g de agua es aceptable para 60\u00b0 Brix (50\u00b0 Brix en la realidad) y 50 g de az\u00facar\/100 g de agua para 30\u00b0 Brix.<\/p>\n<p>En mi opini\u00f3n, esta receta es una de las primeras que hay que poner en <a href=\"https:\/\/camille-patisserie.com\/cap-patisserie-candidat-libre\/carnet-de-recettes-cap-sorganiser\/\" target=\"_blank\" rel=\"noopener\">un recetario<\/a>. Consejo: puedes hacer m\u00e1s cantidad y guardarla en frascos herm\u00e9ticos en el frigor\u00edfico. <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Instalar-la-planta-de-fresas\"><\/span>Instalar la planta de fresas<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Cuando tengas todo lo que necesitas, puedes empezar a montar la tarta de fresas. Primer paso: coloca el aro sobre un trozo de cartulina dorada y pon encima el aro de hojaldre. No olvides poner un poco de rodo\u00efd encima para evitar las catas al desmoldar (y recuerda comprar moldes de 4,5 cm de altura, si no, es complicado).  <\/p>\n<p>A continuaci\u00f3n, elige las mejores fresas (sobre todo las de tama\u00f1o m\u00e1s regular) y c\u00f3rtalas por la mitad. Aseg\u00farate de recoger la fruta lo antes posible, para no acabar con un mont\u00f3n de fruta que no sea lo bastante fresca o regular para tu huerto de fresas. <\/p>\n<p>Coloca encima el c\u00edrculo de bizcocho y disp\u00f3n las fresas alrededor (el interior de las fresas mirando hacia el rodo\u00efd). Ten cuidado de no apretarlas demasiado, ya que la presi\u00f3n puede hacer que se levanten un poco hacia un lado. Esto quedar\u00e1 feo cuando retires el c\u00edrculo. Aseg\u00farate de dejar espacio suficiente para otra rebanada de bizcocho. <\/p>\n<p>Antes de colocar la muselina, aseg\u00farate de poner un poco de nata entre cada fresa. La gente siempre piensa que la muselina se asentar\u00e1 bien al presionarla, pero en realidad no es as\u00ed. Es incluso mejor pasar una esp\u00e1tula peque\u00f1a entre cada fresa para asegurarte de que los bordes quedan bien cubiertos. Perfora y cubre con muselina para alisar la parte superior. Consejo: si has utilizado demasiada muselina, levanta el aro unos mil\u00edmetros para alisar la parte superior. A continuaci\u00f3n, cubre con el mazap\u00e1n o la cobertura y \u00a1decora en paz! Deja reposar el molde de fresas en el frigor\u00edfico durante al menos 2 horas antes de desmoldarlo.    <\/p>\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-2847\"
