Aunque ya hay unas cuantas en el blog, \u00a1estamos lejos de haber terminado! Sobre todo porque cada a\u00f1o trae su raci\u00f3n de novedades (por ejemplo, los jesuitas y la crema de princesa este a\u00f1o). \u00a1Soplan vientos (relativos) de cambio en la pasteler\u00eda CAP! Sobre todo es sintom\u00e1tico del hecho de que te pueden pedir que prepares algo totalmente fuera de lo com\u00fan, utilizando preparaciones que ya dominas. class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Como probablemente sepas, el postre <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Paris-brest\" target=\"_blank\" rel=\"noopener\">Par\u00eds-Brest<\/a> se cre\u00f3 como homenaje a la famosa carrera Par\u00eds-Brest-Par\u00eds. A Louis Durand, pastelero de Maisons Laffitte, se le ocurri\u00f3 utilizar una rueda de bicicleta para representar su pastel. Verti\u00f3 una pasta choux en forma de c\u00edrculo y la rellen\u00f3 con crema muselina de pralin\u00e9. Originalmente, el pastel ten\u00eda cruces para representar los radios, pero esta tradici\u00f3n se ha perdido (aunque algunos pasteleros siguen haci\u00e9ndolo).   <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Hacer-un-Paris-Brest\"><\/span>Hacer un Par\u00eds-Brest<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>La parte m\u00e1s complicada del Par\u00eds-Brest es, sin duda, la <a href=\"https:\/\/camille-patisserie.com\/recettes-de-base\/pate-a-choux\/\">pasta choux<\/a>. Pero ya te he dado una explicaci\u00f3n detallada en mi art\u00edculo sobre <a href=\"https:\/\/camille-patisserie.com\/2018\/03\/12\/eclairs-au-chocolat-facon-cap\/\" target=\"_blank\" rel=\"noopener\">los \u00e9clairs de chocolate<\/a>. As\u00ed que tienes todo lo que necesitas para que sea un \u00e9xito. Sin embargo, voy a darte todos los consejos espec\u00edficos que necesitas para hacer con \u00e9xito el Paris-Brest escalfado.   <\/p>\n<p>Para empezar, te recomiendo que utilices un rotulador Velleda para hacer plantillas directamente sobre el papel sulfurizado (c\u00edrculos de entre 6 y 8 cm). S\u00f3lo necesitas conocer algunos trucos. Si has dibujado un c\u00edrculo de 8 cm, haz el primer abalorio dentro de \u00e9l (con una punta lisa de 8 \u00f3 10 mm). Si tu c\u00edrculo es de 6 cm, haz el primer abullonado en el exterior.   <\/p>\n<p>A continuaci\u00f3n, embolsa la segunda hebra dentro de la primera, teniendo cuidado de iniciar el c\u00edrculo en un lugar distinto al de la primera. As\u00ed evitas tener dos costuras en el mismo sitio. Por \u00faltimo, coloca una tercera vuelta de pasta choux a horcajadas sobre las dos de abajo.  <\/p>\n<figure id=\"attachment_5275\" aria-describedby=\"caption-attachment-5275\" style=\"width: 600px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"wp-image-2800 size-full\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/pochage-paris-brest-web2.jpg\" alt=\"Par\u00eds-Brest\" width=\"600\" height=\"900\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/pochage-paris-brest-web2.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/pochage-paris-brest-web2-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><figcaption id=\"caption-attachment-5275\" class=\"wp-caption-text\">Relleno del Paris-Brest: 2 hebras pegadas y una 3\u00aa encima<\/figcaption><\/figure>\n<p>Luego, con un tenedor mojado en agua, marca la pasta choux para formar un c\u00edrculo uniforme.<\/p>\n<figure id=\"attachment_5267\" aria-describedby=\"caption-attachment-5267\" style=\"width: 600px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"wp-image-2796 size-full\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/pochage-paris-brest-web.jpg\" alt=\"Par\u00eds-Brest\" width=\"600\" height=\"900\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/pochage-paris-brest-web.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/pochage-paris-brest-web-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><figcaption id=\"caption-attachment-5267\" class=\"wp-caption-text\">Rasca la pasta choux para fusionar las distintas hebras de pasta.<\/figcaption><\/figure>\n<p>Espolvorea con almendras laminadas y hornea a 180\u00b0C durante 20 minutos.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Crema-muselina-de-praline\"><\/span>Crema muselina de pralin\u00e9<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>La cr\u00e8me mousseline es una crema pastelera (la receta completa se encuentra en mi receta de <a href=\"https:\/\/camille-patisserie.com\/recettes-de-base\/creme-patissiere-chocolat\/\" target=\"_blank\" rel=\"noopener\">crema pastelera de chocolate<\/a>) a la que se a\u00f1ade mantequilla (y, por supuesto, pasta de pralin\u00e9 para la mousseline de pralin\u00e9). No es demasiado complicado, pero hay dos puntos b\u00e1sicos que debes tener en cuenta: <\/p>\n<ul>\n<li>tener la cr\u00e8me p\u00e2tissi\u00e8re muy fr\u00eda (para evitar que se derrita la mantequilla)<\/li>\n<li>aseg\u00farate de que la mantequilla est\u00e9 bien cremosa (para que se mezcle bien)<\/li>\n<\/ul>\n<p>Y si tu cr\u00e8me mousseline se trocea, basta con sopletear el bol del robot de cocina. Ten cuidado de no colocar el soplete demasiado cerca del bol, y utiliza movimientos suaves para calentar todo el bol. Una vez cocidos y enfriados los c\u00edrculos de pasta choux, s\u00f3lo queda abrirlos por la mitad. Rell\u00e9nalos con la muselina de pralin\u00e9 con una manga pastelera. Para que queden bonitos, deja que la muselina sobresalga un poco por el borde. Sin embargo, te aconsejo que no seas demasiado generoso con los primeros Paris-Brest, ya que corres el riesgo de quedarte sin muselina en los \u00faltimos. Siempre tendr\u00e1s tiempo de volver una segunda vez para rellenar los m\u00e1s peque\u00f1os.     <\/p>\n<p>Para terminar, vuelve a poner el sombrero en cada c\u00edrculo, espolvorea con az\u00facar glas (\u00a1que se me ha olvidado, pero los m\u00e1s atentos os habr\u00e9is dado cuenta!) y \u00a1voil\u00e0\u00e0\u00e0\u00e0!<\/p>\n<figure id=\"attachment_5271\"
