Richard S\u00e8ve (y su esposa Ga\u00eblle, \u00a1son un equipo!) son uno de los pocos chocolateros de Francia que producen su propio chocolate (lo que llamamos un chocolatero bean-to-bar). He aprendido muchas cosas sobre los macarrones que voy a compartir contigo. Pero antes, ya hab\u00eda hecho macarrones de lim\u00f3n con las recetas de reposter\u00eda de Christelle (\u00a1s\u00e9 que siempre salen muy bien!). Para ser sincera, es la \u00fanica receta de mi vida en la que he fracasado m\u00e1s veces que triunfado ^^. Me lleva mucho tiempo y, como suelo acabar estropeando las c\u00e1scaras, \u00a1el compromiso de tiempo me parec\u00eda insuperable! As\u00ed que sab\u00eda que estaba en buenas manos con esta receta. Pero cuando se trata de hacer macarrones, hay mil millones de maneras diferentes de hacer las cosas, y todo el mundo te dir\u00e1 que es mucho mejor hacerlo as\u00ed por tal o cual raz\u00f3n.  <\/p>\n<p>Christelle utiliza merengue italiano porque cree que hace que las conchas queden m\u00e1s crujientes por encima, pero igual de blandas por dentro. Este m\u00e9todo tiene fama de ser un poco m\u00e1s estable (y, por tanto, m\u00e1s fiable para los principiantes). Pero requiere m\u00e1s equipamiento, ya que necesitas un term\u00f3metro y un robot de cocina (o un amigo que sostenga el batidor cuando viertas el chorrito de az\u00facar en la cuba).  <\/p>\n<h2><span class=\"ez-toc-section\" id=\"El-principio-de-los-macarrones\"><\/span>El principio de los macarrones<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Un poco de informaci\u00f3n antes de entrar en materia con estos macarrones de lim\u00f3n. El macarr\u00f3n, tal y como lo conocemos hoy en d\u00eda, se llama macarr\u00f3n \u00abde Par\u00eds\u00bb. Se compone de 2 c\u00e1scaras pegadas con ganache o crema de mantequilla (popularizada sobre todo por Ladur\u00e9e).  <\/p>\n<p>Las c\u00e1scaras se hacen con un \u00abtant pour tant\u00bb (es decir, una mezcla a partes iguales de almendra en polvo y az\u00facar glas) a la que se a\u00f1ade merengue. Para tu informaci\u00f3n, las c\u00e1scaras de los macarrones no se aromatizan (salvo raras excepciones) porque la mezcla es muy fr\u00e1gil, y el m\u00e1s m\u00ednimo desequilibrio en la receta b\u00e1sica puede suponer un desastre. As\u00ed que es el relleno el que da el sabor.  <\/p>\n<p>Por otro lado, los macarrones originales (conocidos como macarrones Nancy) s\u00f3lo tienen una c\u00e1scara y son mucho m\u00e1s fuertes en polvo de almendra. Y que conste (aunque probablemente sea la \u00fanica interesada) que prefiero los macarrones Nancy ^^. Me vuelve loca ese saborcito a polvo de almendra.  <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Consejos-para-que-los-macarrones-de-limon-salgan-bien\"><\/span>Consejos para que los macarrones de lim\u00f3n salgan bien<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Al igual que en la batalla merengue italiano vs. merengue franc\u00e9s, cada uno tiene su peque\u00f1o consejo. Mercotte, por ejemplo, recomienda utilizar claras de huevo envejecidas. Eso es lo que hice con esta receta. Dej\u00e9 las claras en el frigor\u00edfico unas 3 semanas. Otro consejo: separa las claras en 2 partes. No s\u00e9 si te acuerdas, pero hace unos a\u00f1os sol\u00edamos batir las claras a punto de nieve y luego a\u00f1adirlas a las claras. La tendencia actual es a\u00f1adir parte de las claras sin batir para ligar la mezcla. Las claras batidas a punto de nieve se a\u00f1aden despu\u00e9s. As\u00ed se evita que las claras batidas a punto de nieve se deshagan demasiado al macerar.        <\/p>\n<p>Tambi\u00e9n recomienda secar el polvo de almendra en el horno durante 10 minutos (la humedad es el gran enemigo de los macarrones). Esto no estaba en la receta de Christelle, pero lo hice de todos modos (ten\u00eda muchas ganas de hacer estos macarrones ^^). <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Fase-1-el-proceso-tanto-por-tanto\"><\/span>Fase 1: el proceso tanto por tanto<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Como buena estudiante, empec\u00e9 tostando mi polvo de almendra a 160\u00b0C durante 10 minutos para secarlo bien.<\/p>\n<p><img decoding=\"async\" class=\"alignnone wp-image-2902 size-full\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/poudre-amandes.jpg\" alt=\"macarrones de lim\u00f3n\" width=\"600\" height=\"400\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/poudre-amandes.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/poudre-amandes-300x200.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>Luego, como recomienda la receta, lo licu\u00e9 y lo tamic\u00e9. Al fin y al cabo, no es tan complicado. Mis fracasos en los \u00faltimos intentos me hab\u00edan puesto una presi\u00f3n innecesaria, \u00a1porque siguiendo la receta de Christelle sali\u00f3 solo!  <\/p>\n<p>Primero, bate suavemente las claras en un robot de cocina. En ese momento, a\u00f1ade un toque de colorante para colorear las c\u00e1scaras. Por otro lado, haz un alm\u00edbar con el agua y el az\u00facar y cali\u00e9ntalo a 118\u00b0C (\u00a1es imprescindible un term\u00f3metro!).  <\/p>\n<p><img decoding=\"async\" class=\"alignnone wp-image-2903 size-full\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/sirop.jpg\" alt=\"macarrones de lim\u00f3n\" width=\"600\" height=\"899\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/sirop.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/sirop-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>Cuando la mezcla alcance la temperatura deseada, vierte el alm\u00edbar en un chorrito a lo largo del bol (esto es importante para que se incorpore bien). Sigue batiendo unos diez minutos m\u00e1s hasta que la mezcla se haya enfriado. \u00a1El merengue italiano est\u00e1 listo!  <\/p>\n<h2><span class=\"ez-toc-section\" id=\"4a-fase-branding\"><\/span>4\u00aa fase: branding<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>\u00a1Y ah\u00ed es donde la cosa se complica, mi valiente Lucette! Las claras montadas se a\u00f1aden suavemente a la mezcla de polvo y clara de almendra. Y luego se \u00abmacaronne\u00bb: es decir, se mezclan las claras con la mezcla de almendras. Hay que aplastar las claras en el borde del bol para que la mezcla quede homog\u00e9nea. Cuando la mezcla sea homog\u00e9nea, normalmente debe formar una cinta (es decir, la mezcla debe ser lo bastante espesa como para tardar unos segundos en caer).    <\/p>\n<p>A continuaci\u00f3n, introduce la mezcla en una manga pastelera y coloca peque\u00f1os c\u00edrculos en filas escalonadas (3 cm como m\u00e1ximo, los m\u00edos son un poco grandes). Lo mejor es escalfar los macarrones sobre papel sulfurizado con una placa perforada bajo la que colocas una plantilla. La plantilla es importante porque te permite escalfar los macarrones uniformemente, tanto en tama\u00f1o como en posici\u00f3n.  <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Paso-5-Cocinar\"><\/span>Paso 5: Cocinar<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Hace alg\u00fan tiempo, sol\u00edamos jurar que empolv\u00e1bamos los macarrones antes de hornearlos (dej\u00e1ndolos al aire libre durante al menos 15 minutos antes de meterlos en el horno), pero tengo la impresi\u00f3n de que se est\u00e1 quedando anticuado. Yo lo hice para esta hornada, pero ya ver\u00e1s que en mi Masterclass en casa de Richard S\u00e8ve no lo hicimos, \u00a1y tambi\u00e9n funcion\u00f3 muy bien! De todos modos, es imprescindible golpear la bandeja de horno varias veces sobre la superficie de trabajo para distribuir la masa uniformemente y evitar las burbujas.  <\/p>\n<p>A continuaci\u00f3n, hornea a 160\u00b0C (horno ventilado) durante 13 minutos. Como se\u00f1ala Christelle en su receta, todo es cuesti\u00f3n de horno y atenci\u00f3n. Realmente tienes que probar tu equipo para garantizar una cocci\u00f3n perfecta. \u00bfY qu\u00e9 es una cocci\u00f3n perfecta? Pues es cuando el cuello se ha desarrollado bien, el macarr\u00f3n est\u00e1 cocido por encima y se despega solo del papel sulfurizado. Si crees que el macarr\u00f3n est\u00e1 cocido pero no se despega, puedes pasar un chorrito de agua entre la bandeja de horno y el papel sulfurizado. Con el vapor generado por el calor de la bandeja al salir del horno, \u00a1las c\u00e1scaras se despegar\u00e1n solas! \u00a1Ya est\u00e1n listas para rellenar!       <\/p>\n<h2><span class=\"ez-toc-section\" id=\"6a-etapa-hacer-la-cuajada-de-limon\"><\/span>6\u00aa etapa: hacer la cuajada de lim\u00f3n<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Nunca me he tomado la molestia de publicar la receta de la crema de lim\u00f3n, aunque la hago a menudo. De hecho, es el mismo proceso que se utiliza para hacer la crema de lim\u00f3n en una <a href=\"https:\/\/camille-patisserie.com\/2018\/05\/14\/tarte-au-citron-cap\/\" target=\"_blank\" rel=\"noopener\">tarta de lim\u00f3n.<\/a> Hay varias t\u00e9cnicas, pero personalmente pongo el zumo de lim\u00f3n, el az\u00facar, la harina de ma\u00edz y los huevos batidos en un cazo de fondo grueso. Calienta a fuego lento, removiendo con regularidad. La crema se espesar\u00e1 hasta alcanzar la consistencia de la mayonesa. Retira del fuego y a\u00f1ade la mantequilla, mezclando bien. Si a\u00fan quedan trozos (por ejemplo, claras de huevo coaguladas), puedes utilizar una batidora de mano para que la mezcla quede suave.     <\/p>\n<p><img decoding=\"async\" class=\"alignnone
