Aprend\u00ed un mont\u00f3n de trucos (\u00a1no todos los d\u00edas se puede asistir a una clase con un miembro de Relais et Desserts!). Como me han dado permiso para publicar la receta, \u00a1te dar\u00e9 todos los peque\u00f1os consejos que necesitas para hacer macarrones como el chef! familia S\u00e8ve. Conoc\u00ed a Richard y Ga\u00eblle durante una clase de tarta de pralin\u00e9 en la sala de exposici\u00f3n de Kenwood. Me qued\u00e9 inmediatamente prendada de su amabilidad y del amor que sienten por sus productos. Son el tipo de artesanos que nos gustar\u00eda ver m\u00e1s: con una \u00e9tica del trabajo que despierta admiraci\u00f3n en un mundo en el que cada vez se toman m\u00e1s atajos. Para garantizar la calidad de su chocolate, Richard y Ga\u00eblle viajan por todo el mundo para abastecerse de habas y son una de las \u00fanicas marcas de Francia que ofrecen <a href=\"https:\/\/www.chocolatseve.com\/\" target=\"_blank\" rel=\"noopener\">chocolate \u00abde haba a tableta\u00bb<\/a> (es decir, el haba se muele en las instalaciones para producir el chocolate tal y como lo conocemos). Pues bien, \u00a1en esta clase magistral no hemos utilizado ninguno de ellos! No secamos el polvo de almendra en el horno, ni envejecimos las claras de huevo, ni utilizamos merengue italiano. \u00a1Ni siquiera hemos hecho la corteza!   <\/p>\n<p>\u00a1La receta de la chocolater\u00eda S\u00e8ve utiliza merengue franc\u00e9s! En otra desviaci\u00f3n de las recetas habituales de macarrones, no hicimos un \u00abtant pour tant\u00bb (normalmente utilizamos el mismo peso de az\u00facar glas que de almendra en polvo, pero no es el caso aqu\u00ed). <\/p>\n<p>Entonces, \u00bffunciona? \u00a1S\u00ed! Incluso sin estos h\u00e1bitos, los macarrones son realmente sabrosos y tienen un bonito volante, \u00a1es impresionante! Hicimos 3 recetas de macarrones: de chocolate, de pistacho y rosas. Como dije en el art\u00edculo anterior, las c\u00e1scaras de los macarrones no est\u00e1n aromatizadas. As\u00ed que son los rellenos los que aportan el sabor. De hecho, est\u00e1 estrictamente prohibido comer los macarrones antes de que hayan madurado durante 24 horas: \u00a1es el relleno lo que hace que las c\u00e1scaras sean blandas y fragantes!      <\/p>\n<p>En esta receta, tenemos una ganache de chocolate y cremas de mantequilla rosa y de pistacho.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Receta-de-macarrones-de-Richard-Seve\"><\/span>Receta de macarrones de Richard S\u00e8ve<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>\u00a1Manos a la obra! Primer paso: hacer el merengue franc\u00e9s. Para ello, el chef recomienda batir las claras muy suavemente durante casi 20 minutos. Es un tiempo bastante largo, pero permite que se incorporen las burbujas de aire m\u00e1s peque\u00f1as. As\u00ed, si algunas revientan, quedan muchas m\u00e1s y las claras se mantienen mejor unidas. Para terminar, pon el robot de cocina a funcionar lentamente y prepara mientras tanto la ganache.     <\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-3010\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/montage-blanc-oeufs.jpg\" alt=\"\" width=\"600\" height=\"899\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/montage-blanc-oeufs.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/montage-blanc-oeufs-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<h2><span class=\"ez-toc-section\" id=\"%C2%A1La-famosa-ganache-de-chocolate\"><\/span>\u00a1La (famosa) ganache de chocolate!<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Para ser sincera, cuando vine a esta clase magistral sobre macarrones, no esperaba que me entusiasmara hacer ganache (\u00a1una de las cosas m\u00e1s f\u00e1ciles de la reposter\u00eda!). Pero, en realidad, \u00bfqu\u00e9 mejor manera de aprender los fundamentos del uso del chocolate que de la mano de un chocolatero? <\/p>\n<p>De hecho, el chef hace su ganache directamente en la batidora. Y cr\u00e9eme, \u00a1eso lo cambia todo! La textura es cremosa y brillante, una aut\u00e9ntica delicia para el paladar.  <\/p>\n<p>Para hacer un ganache en una batidora (o robot de cocina), simplemente hierve la nata de la forma tradicional y a\u00f1\u00e1dela al chocolate en 3 tandas. Entonces es el momento de mezclar de nuevo para obtener una ganache lisa y brillante. Se deja cristalizar de 20 a 30 minutos.  <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Hacer-las-cascaras-de-macarrones\"><\/span>Hacer las c\u00e1scaras de macarrones<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Una vez cuajadas las claras, se a\u00f1ade el colorante rosa o verde (para el chocolate, las c\u00e1scaras se colorear\u00e1n con el cacao a\u00f1adido al az\u00facar). El chef utiliza colorante en polvo. <\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-3000\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/colorant-vert.jpg\" alt=\"\" width=\"600\" height=\"899\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/colorant-vert.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/colorant-vert-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>A continuaci\u00f3n, a\u00f1adimos la mezcla de almendra en polvo y az\u00facar glas tamizado (el az\u00facar glas no tanto, as\u00ed que ^^). Esta es la mezcla de cacao. <\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-3008\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/macaronnage.jpg\" alt=\"\" width=\"600\" height=\"899\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/macaronnage.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/macaronnage-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>De forma muy tradicional, se macera la masa (es decir, se lleva la masa de abajo a arriba y se alisa con una esp\u00e1tula flexible) hasta formar una cinta. A continuaci\u00f3n, introduce la mezcla en una manga pastelera. <\/p>\n<p>Pon las c\u00fapulas uniformemente sobre papel sulfurizado utilizando una manga pastelera de 9 mm.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-3009\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/macarons-rose.jpg\" alt=\"\" width=\"600\" height=\"899\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/macarons-rose.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/macarons-rose-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>La chef S\u00e8ve utiliza una plantilla bajo el papel sulfurizado para garantizar un escalfado uniforme (condici\u00f3n sine qua non para el \u00e9xito de la cocci\u00f3n).<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-3001\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/coques-macarons.jpg\" alt=\"\" width=\"600\" height=\"899\" title=\"\" srcset=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/coques-macarons.jpg 600w, https:\/\/camille-patisserie.com\/wp-content\/uploads\/coques-macarons-200x300.jpg 200w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>Es un poco incoherente en lo que se refiere a la caza furtiva para nosotros los estudiantes ^^.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Hornear-macarrones\"><\/span>Hornear macarrones<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Por supuesto, esto depender\u00e1 de tu horno, pero el chef recomienda hornear a 180\u00b0C durante 18 minutos. Al sacarlas del horno, las c\u00e1scaras deben estar duras (se ablandar\u00e1n al contacto con el relleno). <\/p>\n<h2><span class=\"ez-toc-section\" id=\"Crema-de-mantequilla\"><\/span>Crema de mantequilla<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Mientras se horneaban los macarrones, hicimos una crema de mantequilla para adornar los macarrones rosas y de pistacho.<\/p>\n<p>Para ello, empieza batiendo las claras a velocidad media. A continuaci\u00f3n, haz un alm\u00edbar y cali\u00e9ntalo a 121\u00b0C. Probamos el m\u00e9todo de la bolita para comprobar la temperatura. Sumerge los dedos en agua fr\u00eda y coge un poco del material, luego vuelve a sumergirlo en el cuenco de agua fr\u00eda. \u00a1Deber\u00edas poder formar una bolita!    <\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-3017\" src=\"https:\/\/camille-patisserie.com\/wp-content\/uploads\/petit-boul%C3%A9.jpg\" alt=\"\" width=\"600\" height=\"899\" title=\"\"><\/p>\n<p>\u00a1Lo he probado y funciona!
